Dissolve two packets of yeast in 1/2c warm H2O and set aside.
In second bowl, mix one cup of HOT H2O, 1/2c. honey, 1/3c shortening and 1tsp salt. Mix until the honey and water are no longer separated and shortening is beginning to melt. Let cool til lukewarm.
Add 1c. of whole wheat flour and 1c. of white. Mix in. Add 2 eggs. Mix in. Add yeast mixture. Work in remaining 4-5 c. of white flour until you have a kneadable dough. Knead 2-3 times.
Place in greased bowl and cover in fridge for about 8 hours or until the dough doubles in size.
Remove from bowl, punch dough down, divide in half and place in greased bread pans. Let rise in warm place for about two hours. bake at 350 for about 50 minutes or until brown on top.
Amazingly good with tuna salad. Or cut fresh with a little honey in the morning.
