Lemon-Topped Gingerbread
1/2 cup All-purpose flour 2 tbsp Brown sugar (packed)
2 tbsp Shortening 1/2 cup Whole wheat flour
1/4 cup Hot water 1/4 cup Molasses
1/2 tsp Baking soda 1/2 tsp Ground ginger
1/2 tsp Ground cinnamon 1/8 tsp Salt
1 Egg white Lemon Sauce

Heat oven to 325`F. Spray your pan with a non-stick cooking spray. Beat all ingredients except for the Lemon Sauce in a medium bowl for about 3 minutes on medium speed. Pour into pan. Then bake it for 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool for 10 minutes and remove from pan. Serve hot or cold with Lemon Sauce.

Lemon Sauce 3 tbsp Sugar 1 tbsp Cornstarch
1 cup Water 1 tbsp Lemon peal (grated)
1 tbsp Lemon juice

Mix sugar and cornstarch in saucepan. Gradually stir in water. Cook over medium heat, stirring constantly, until thick and boiling. Remove from heat and add in the remaining ingredients. Sweet and Simple!!!!
