Summer Salad Sandwich
2 cups watermelon wedges, seeded
1 cup cooked chicken, chopped 
1 Tbsp. chopped cilantro 
2 Tbsp. plain , low-fat yogurt 
1/4 tsp. garlic salt
1/8 tsp. cayenne pepper
2 pita breads, halved
1/4 cup low-fat cream cheese
4 large lettuce leaves

Place cubed watermelon on paper towels to remove excess liquid.

Mix chicken, cilantro, yogurt, garlic salt and cayenne pepper. Spread inside surface of pita bread halves with herb cheese and fill each with about 1/4 cup chicken mixture.

Arrange watermelon and lettuce in pita bread.
