| Ingredients |
| 1/3 cup granulated sugar 1 cup light brown sugar 1/2 cup pure maple syrup 1/4 cup dark corn syrup 1 cup heavy cream |
| Preparation |
| Mix all ingredients in a heavy-bottomed saucepan. Cook over high heat until the mixture reaches 200 on a candy thermometer. Let cool for 20 minutes and skim the surface if necessary. Serve over warm apple spice cake, and vanilla bean ice cream.
