Salsa by Iowajan:

Start with:
18 tomatoes 
5 large onions 
5 large green peppers 
7 T. sugar 
2 T. salt 
10 whole cloves 
1/2 C. white vinegar 
2 hot salsa peppers 
(I use jalapenos-but less habanero 
would be fine or most any other)
and I add cilantro to taste 
(which is quite a bit-dried or fresh)

Simmer 2 - 2 1/2 hours -boiling water 
bath to can after the simmering- of
course you can cut it in half (it's up 
to you whether you peel the tomatoes
or remove the cloves-I don't but I pick 
them out while it's simmering usually.
