Parmesan Catfish

Combine parmesan, flour, salt, pepper and optional paprika in a shallow dish. Combine milk and eggs in another shallow dish. Dip fresh fish into milk/egg mixture, then dredge in cheese/flour mixture. Place fillets in a lightly greased baking dish. Drizzle fillets with butter, and sprinkle with almonds. Bake at 350 degrees F. for 20 minutes or until done.

NOTE: Substitute any mild seafood fillets that are 1.25" thick such as cusk, cod or ocean pout. Makes 6 servings.
