Sausage Skillet

Ingredients: (8 servings)

8 red potatoes

16 Italian-style sausages

2 onions, diced

2 green bell peppers

2 red bell peppers

8 red potatoes, cut in ½" cubes

8 Italian-style sausages, cut into ¼" slices

2 onions, diced

1 bell pepper, cut into lengths

1 red pepper, cut into lengths

Preparation:

In Dutch oven, cover potatoes and sausage with water; simmer, covered, until sausage is fully cooked, about 30 minutes. Drain off water; add vegetables to potatoes and sausage in Dutch oven. Simmer 15 minutes, stirring occasionally. Serve immediately.
